CASTELVECCHIO OLIVE OIL
The location of production of Castelvecchio olive oil is the Carso of Gorizia, characterized by limestone rocks and red soil rich of iron. The harvest is strictly by hand in November during two phases depending on the maturation.
The olive-grove, in which grow 545 plants of about 12 years old, is composed by different varities: for the majority by biancheria (30%) and leccino (20%), but also in a less percentage by pendolino, grignano, moraiolo and frantoio. The oil has an acidity of the 0,19%, it is cold squeezed in a press by the olive-press of S. Dorligo, and bottled in Bordolese bottles. The annual production is of 1000 bottles of 500lt each.
