CASTELBRUT
The Castelbrut is the Charmat sparkling wine of Castelvecchio coming from a cuvee of Terrano grapes (white vinification), Chardonnay, and a small amount of Malvasia Istriana.
The Charmat system (name coming from a French engineer who invented this method) is usually a two-mouth process in which the wine rests in barrels along with sugar and yeasts in order to become sparkling.
In the case of our Castelbrut, the process lasts for 9 mouths (Long Charmat). The reason of this long procedure is because the results make the sparkling wine more sophisticated and closer to the characteristics of Champenois Champaign. At the taste, Castelbrut has a nice acidity coming from the presence of the Terrano grapes. It should be served at a temperature of 6/8° C.
The annual production of the Castelbrut is of 6.000 regular bottles and 300 Magnum bottles.
